Ithaa, the world’s first all-glass under-sea restaurant at the Conrad Maldives Rangali Island,  will celebrate its fifth Anniversary with Hubert de Billy from the prestigious Champagne House Pol Roger. The restaurant is five metres below the waves of the Indian Ocean, surrounded by a vibrant coral reef and encased in clear glass. Champagne has been the wine concept since the opening of Ithaa, to match both the unique Maldivian fusion cuisine and reflect the oxygen bubbles outside the restaurant. Over 43,800 travel enthusiast’s have enjoyed the 180-degrees of panoramic underwater views and unique Maldivian-fusion cuisine since opening. During his visit Hubert De Billy of the Pol-Roger family, will host an exclusive Blanc de Blanc vertical tasting in Ithaa on April, 17th. Executive Chef David Laval will design an exclusive menu for the occasion to  perfectly complement the chosen champagnes.

April16th, Hubert de Billy will take guests on a champagne-tasting journey in the resort’s under-ground Wine Cellar, with individual video screens transporting guests to the vineyards whilst tasting a selection of Pol Rogers finest champagnes matched with a five-course tasting menu. Hubert de Billy is the latest in a long list of world-renowned wine-makers and Chefs who have flocked to the resort to host food and wine events, with highlights  including  visits  from Frederic Engerer of Chateau Latour;  Jean-Guillaume Pratt, owner of Château Cos D’Estournel and Chef Mathieu Pacau of acclaimed Paris restaurant L’Ambroisie.
